Vegetable Adai

Ingredients
1. Boiled rice ... 1 cup
2. Toor dhal ... 1/4 cup
3. Bengal gram ... 1/2 cup
4. Urad dhal ... 1/4 cup
5. Moong dhal ... 1/2 cup
6. Red chillies ... 6 nos
7. Asafoetida ... 1 tsp
8. Salt ... to taste
9. Cabbage -- shredded ... 1 cup
10. Onion -- chopped ... 2 nos
11. Beans -- cut ... 1 cup
12. Carrot -- cut into small pieces ... 2 nos
13. Coconut -- grated ... 1 tablespoon
14. Coriander leaves -- cut ... a little
15. Curry leaves -- cut ... a little
16. Oil ... to fry.

 

Method:

  1. 1. Soak the rice, the dhals individually for 2 to 3 hours.
  2. Cut the vegetables into small and fine bits and keep aside.
  3. Grind rice, red chillies and asafoetida into a coarse paste. (batter)
  4. Grind urad dhal and moong dhal together coarse and keep aside.
  5. Grind the toor dhal and bengal gram coarse and keep aside.
  6. Mix the ground dhal items, rice, carrot, cabbage, onion, beans, grated coconut, coriander leaves, curry leaves and the salt that is required for the entire batter adding very little water and make a thick batter.
  7. Spread the batter over a hot frying pan with oil on the edges, reduce the flame and fry till both sides become golden brown.
  8. Caution: If the batter is watery the adai will not come well. Normally adai would be thicker and it is to be cooked well.
