Tomato Marmalade

Ingredients
4 lbs. Tomatoes
3 lemons

 

Method:

  1. Remove skins of tomatoes by immersing in boiling water for 5 mins. cut into thick slices.
  2. cut 3 large lemons into very thin slices removing the pips carefully.
  3. Into a pan put a tea cup of water, add 4 lbs sugar, and place on stove to boil.
  4. Stir while it dissolves removing any scum that may rise.
  5. Boil the sugar for 5 mins then add the tomatoes and lemons and boil quickly.
  6. Skim carefully with stirring the marmalade.
  7. When it gels, pour into jars and seal with parchment covers.
