Stuffed Brinjal Curry

Ingredients
10/12 small round brinjals,
1 cup coconut,
1 big onion,
3/4 cup peanut powder or peanuts (roasted),
1/4 cup sesame seeds,
1/2 tbsp each coriander-cumin seeds,
2 tbsp Maharashtrian goda Masala,
chili powder,
salt,
asafoetida,
onion-ginger-garlic paste,
turmeric powder,
lemon juice

 

Method:

  1. Wash & remove stems , give four slits (not fully) to the brinjals.
  2. Roast coconut, sesame seeds, seperately till light brown. Grind this mixture with peanut powder.
  3. In a pan heat oil & add mustard seeds. When they start spluttering add cumin seeds ,asafoetida, paste of onion ,ginger & garlic.
  4. Then fry it well and add the brinjals,and allow to fry them.
  5. Add turmeric powder,goda masala,chilli powder & the peanut powder we prepared above.Mix it well. Pour in some water just to cover the top of brinjals.
  6. Cover & heat on a medium flame for about 15 min.Add salt to it.
  7. Stir well.Add some lemon juice to it.
  8. Garnish with coriander leaves.
  9. Serve hot with chapati or rice.
  10. Note:-Rather than frying brinjals directly,u can also boil them ,not fully,in >a cooker without having whistle over it for 10 min.So that they will fry nicely.
