Stuffed Brinjal

Ingredients
1. Tender Brinjal ... 1/2 kilo
2. Nicely chopped Big onion ...2 nos.

For Masala:
3. Grated coconut ... 1/4 cup
4. Red chillies ... 8 nos
5. Garlic ... 5 pearls
6. Dhaniya ... 2 tsp
7. Fried bengal gram ... 2 tsp
8. Chopped Big onion ... 1 no
9. Tomatoes ... 3 nos.
10. Salt ... to taste

For seasoning:
11. Mustard ... 1 tsp
12. Urad dhal ... 1 tsp
13. Bengal gram ... 1 tsp
14. Oil ... to fry.

 

Method:

  1. Grind items 3 to 10 in a mixie like a paste.
  2. Heat the oil in a kadai or vessel, add the mustard, and after it splatters, add the urad dhal, bengal gram and fry till they turn golden brown.
  3. Mix the ground paste with this and mix very well.
  4. Make two incomplete vertical cuts in the brinjal open it and stuff the mixture into them.
  5. Keep the brinjals in a kadai in which a little oil is heated and if there is left over of the masala, transfer it on to the brinjals and pour the water in which the mixie is washed, cover it with a lid and allow it to get boiled in medium flame. Now and the open the lid and stir the brinjals so that it does not get stuck to the bottom.
  6. After the brinjal is well cooked and the water has evaporated, mix them well again and keep it in low flame for one more minute and remove from the stove.
  7. After it has cooled down, stuff the brinjals with the masala, if any, which has come out while boiling and arrange nicely and artistically in a vessel and serve.
