Rasam Powder

Ingredients
1. Toor dhal ... 1/2 kilo
2. Pepper ... 250 gm
3. Cummins (jeera) ... 200 gm
4. Asafoetida ... 100 gm
5. Red chillies ... 300 gm
6. Coriader seeds ... 3/4 kilo
7. Turmeric powder ... 50 gm
8. Curry leaves ... 1 handfull.

 

Method:

  1. Fry asafoetida bits in a pan without adding oil and keep aside.
  2. Dry fry pepper lightly in a pan. This should be followed by toor dhal, and after it is slightly fried, break the red chillies by hand and add to this. Then add the coriander seeds followed by curry leaves. Lastly add cummins (jeera) and fry everything well.
  3. Grind the above as a coarse powder in a mixie and after that, add the turmeric powder and mix it well.
  4. For a tumbler (roughly 200 ml) of tomatoe a or dhal rasam, just 11/2 teaspoonfuls of of this powder will give a tasty rasam with an unbeatble flavour.
  5. Important instructions: (a) Please do not change the order in which the ingredients are to be fried. (b) Please do not add the the asafoetida powder when the tamarind extract is boiling as is done by so many people. The asafoetida should be added to the mixture and ground well with the powder itself.
