Muthiya (Steamed Koftas)
Ingredients
3cups grated doodhi (bottle gourd/lauki)
1 cup semolina (suji)
1 cup wheat flour
1 cup besan (chick pea flour)
3 tea spoon ginger chilli paste
2 lime juice
baking powder
pinch of haldi (turmeric) & asfoetida(hing)
salt
2 tea spoon oil
Method:
- keep water in a steaming pot to boil.
- while water is boiling start mixing all the ingredints coarsely except lime juice & baking powder.
- add 1 teaspoon bakibg soda over it add lime juice.
- mix well t form stiff dough.
- on steaming rack keep the dough like rolls.
- arrange all the rolls next to each other. even if it touches each other that is ok.
- steam for 40- 50 mins til is cooked.
- open the lid, allow to cool & cut each each roll horizonatlly into slices like bread.
- serve hot with chhash( buttermilk) & chutney. OR keep oil in pan & add mustard seeds allow to splutter add sesame seeds & hind. & fry on a slow flame till little crispy . garnish with chopped coriander. serve hot with chhash( buttermilk) & chutney.
