Muthiya (Steamed Koftas)

Ingredients
3cups grated doodhi (bottle gourd/lauki)
1 cup semolina (suji)
1 cup wheat flour
1 cup besan (chick pea flour)
3 tea spoon ginger chilli paste
2 lime juice
baking powder
pinch of haldi (turmeric) & asfoetida(hing)
salt
2 tea spoon oil

 

Method:

  1. keep water in a steaming pot to boil.
  2. while water is boiling start mixing all the ingredints coarsely except lime juice & baking powder.
  3. add 1 teaspoon bakibg soda over it add lime juice.
  4. mix well t form stiff dough.
  5. on steaming rack keep the dough like rolls.
  6. arrange all the rolls next to each other. even if it touches each other that is ok.
  7. steam for 40- 50 mins til is cooked.
  8. open the lid, allow to cool & cut each each roll horizonatlly into slices like bread.
  9. serve hot with chhash( buttermilk) & chutney. OR keep oil in pan & add mustard seeds allow to splutter add sesame seeds & hind. & fry on a slow flame till little crispy . garnish with chopped coriander. serve hot with chhash( buttermilk) & chutney.
