Kashmiri Aloo Dum
Ingredients
500 g. small new potatoes skinned. Deep fry, drain and set aside.
For Gravy
Oil
Fry 2 cardamom,
1 small pc. Cinnamon.
paste of 1/4 tsp. red chilli, jeera 1tsp., 1/4 tsp haldi ,
1 tsp. Almond paste and
1 tbsp. ground onion,
salt to taste
Method:
- Heat 1 tbsp. oil in deep pan.
- Fry 2 cardamom, 1 small pc. Cinnamon.
- Add a paste of 1/4 tsp. red chilli, jeera 1tsp., 1/4 tsp haldi , 1 tsp. Almond paste and 1 tbsp. ground onion, salt to taste.
- Fry all this well in the oil. Add a little water and simmer the gravy.
- Poke the potatoes with a fork on both sides to allow them to absorb the flavour of the gravy and simmer covered with lid for about 8 mins.
- Turn off heat. Add 1 tbsp. thick cream and swirl.
- Garnish - with some crisply fried onions, slivers of almonds. Serve with parathas.
