Grilled Otak-Otak
Ingredients
300gm fish meat(minced finely)
1 tsp salt
1 tbsp water
Grounded Spices:
60g shallots
10g garlic
4 fresh red chillies
2 lemon grass
1 slice of galangal(lengkuas)
1/2 in fresh turmeric/1 tsp turmeric powder
11/2 cm toasted shrimp paste(roasted belacan)
4 candlenuts
60g coconut,fried and grounded(for kerisik)(optional)
180ml thick coconut milk
1/2 tsp sugar
To wrap:
Banana leaves,toothpick or stapler.
Method:
- Mix Ingredients A with ground spices
- Add in coconut milk and sugar.
- Wrap mixture with banana leaves and staple both ends/or use tooth picks.
- Grill at 250C abt 15 min until cooked.Serve hot.
- Note: U can even grill over charcoal fire.
