Coconut Rice

Ingredients
1. Grated fresh coconut : 1 cup
2. Green Chillies : finely chopped
3. Urad Dal : 1 teaspoon
4. Chana Dal : 1 teaspoon
5. Mustard Seeds : 1 teaspoon
6. Curry leaves
7. Cooked Rice
8. Salt to taste
9. Oil for cooking
10. Coconut oil : 1 teaspoon

 

Method:

  1. Cook the rice and spread it on a plate and allow it to cool.
  2. In a pan...heat a little oil.
  3. Add mustard seeds...when it cracks, add the urad and chana dal to it....
  4. Add the curry leaves and chillies....when the dal turns brown, add grated coconut to it
  5. Saute till the raw smell of the coconut goes.
  6. Do not roast it...the white colour of the coconut is to be retained....it wont taste good, if it gets roasted. Cook it just for 2-3 min on medium flame.
  7. Add salt and the coconut oil and mix well.
  8. Let the mixture cool for sometime time.
  9. Mix it well with the rice....
  10. Hints :- Add salt less than normal. The rice will taste better with less salt.
  11. Coconut oil is optional....it just gives more coconut flavour to it....Even otherwise, the rice comes out very tasty.
  12. Coconut can be used more, if preferred.
  13. Cooking time is just 10 min, if the rice is ready.
  14. No side dish needed.
