Carrot Salad

Ingredients
Fresh grated carrots- 4 nos
dried masala peppers or green chillies- 2 nos
oil, mustard,pinch of aesotofoida & cumin powder & turmeric
4 tbs of roasted peanut powder (coarse-ground)
salt and sugar to taste, 2 tbs of fresh lime juice
gresh chooped corriander and/or coconut to garnish.

 

Method:

  1. Mix grated carrots, lime juice,salt,sugar,peanut powder
  2. Heat oil, add mustard,aesotofoida powder,cumin powder, turmeric and chilies
  3. Pour it on the carrot mixture after heated
  4. Mix it well with hands
  5. Garnish with fresh chopped corriander/cilantro
  6. Also with fresh grated coconut if you can get it
  7. Enjoy this dish....,eat as much as you can as it is high in Fibre, Vitamins and low in Calories.....,Oh it sure is very tasty !
  8. note : dried masala peppers are found in most Indian stores & are great for a lot of salads like Carrot,Raddish, Cabbage ,etc.... Also great for Curd rice.
  9. They last for several months as they are de-seeded, filled with masala and dried thoroughly !
