Caramel Custard

Ingredients
1/2 cup sugar for caramel 5 eggs
3 cups milk 1/3 cup sugar
1 tsp vanilla essence 1/4 tsp salt.

 

Method:

  1. Beat eggs, sugar, salt and essence together in bowl till lightly frothy.
  2. Scald milk and pour over eggs stirring all the time. Set oven at 375 deg F.
  3. Put pan of hot water on second shelf.
  4. Put 1/2 cup sugar in saucepan and on low heat stirring all the time dissolve till it becomes golden brown syrup.
  5. Pour into pyrex dish at once. Pour custard mixture over.
  6. Put bowl in pan of hot water and push to back of oven. Bake for 40-45 mins or until a knife inserted comes out clean.
  7. Remove from oven. Cool. Turn onto serving dish. The syrup can be used as sauce or served with cream and fruit.
  8. Alternatively --- can be put in steel basin covered with foil and pressure-cooked on the trivet of your cooker, equally well --- cook at pressure for about 15 mins. Turn off gas/electricity and leave to cool naturally. Open and turn onto fancy dish. Chill and serve.
