Ingredients
White Melon 200 gms
Suran 200 gms
Drumsticks 2 raw sticks
pumpkin 200 gms
Raw bananas 2
Simla Mirch 4
Gawaar 100 gms raw
Paapdi 100 gms raw
grated coconut 1 cup
green chillis 4
Jeera 1 teaspoon
mustard 1 teaspoon
Coconut oil 2 tablespoons
Curry leaves a handful
Sour curd 1 cup
Method:
- Wash the vegetables except the simla mirch and cut them into 2 inches long, 1/3 inches thick.
- Mix them in a pressure pan, Add some water and steam cook to 2 whistles.
- Meanwhile, grind the grated coconut along with Jeera and green chillis in a mixer to fine paste.
- Instead of adding water, add half cup sour curd to the coconut while grinding it.
- Now put the pressure pan with the cooked vegetables on slow fire for 2 minutes.
- Add the coconut paste to the vegetables, and wash it with remaining sour curd.
- Mix well and let the vegetables cook for another 2 minutes.
- Take a small kadai and add 1 spoon of oil to it. Keep it on slow flame. Add mustard and let it splutter.
- Add the mustard to the cooked vegetables and finally add the curry leaves. Heat 2 tablespoons of coconut oil in the small kadai just enough to become warm, and pour over the vegetables. Mix well.
- AVIAL is ready to be served with rice, papad and pickles
