Vegetable Kurma

Ingredients
cardamom -2 or 3
cloves -2
pattai - a small piece
onion (chopped) - 2 nos
Tomato(chopped) - 2 nos
Green chilli - 2 nos
potato(chopped) - 2 nos
carrot(chopped) -1
Beans (chopped) -- 1/2 cup
Peas -- 1/4 cup
coriander leaves
Mint leaves
chilli powder - 1/4 tps
Turmeric powder - 1/4 tps
coconut - 2 tps
cashewnut - 10 nos
Sombu - 1/4 tps
Kasakasa -1 tps
salt
oil.

 

Method:

  1. Heat oil add pattai, cardamom, cloves and fry for 30 sec.
  2. Add Green chillies, Mint leaves, coriander and fry for 1 minute.
  3. Add onion and fry till brown and then add tomato and fry for 2 minutes.
  4. Add the vegetables (potato, carrot, peas, Beans) chilli powder, turmeric powder, salt and 2 glasses of water and cook the vegetables for 10 minutes.
  5. Make a paste of coconut, cashewnut, sombu, kasakasa and add to the above and cook for another 5-6 minutes.
