Vatha Kozhambu -- Madurai Special

Ingredients
1. Tamarind ... Medium lemon size.
2. Fenugreek ... 1/4 tsp
3. Mustard ... 1/4 tsp
4. Urad dhal ... 1tsp
5. Toor dhal ... 1 tsp
6. Bengal gram ... 1 tsp
7. Onion (big) chopped ... 1 no
8. Tomatoe -- chopped ... 1 no
9, Garlic ... 4 cloves
10. Red chilly ... 1 no
11. Chilly powder ... 2 tsp
12.Dhaniya powder ... 4 tsp
13. Curry leaves ... 1 stalk

 

Method:

  1. Make an extract of tamarind and add curry leaves.
  2. Heat oil in a kadai, add mustard, fenugreek, urad dhal, toor dhal and bengal gram and after it splatters --
  3. Add garlic, onion, saute it and add chilly powder, dhaniya powder and saute it further.
  4. Add the tamarind extract to this after a good aroma emanates, add the coirander leaves and a little curry leaves. Remove from the stove.
