Stuffed Brinjal Curry
Ingredients
1. Brinjal (tender) ... 1/2 kg
2. Onion (big) ... 2 (chopped fine)
For stuffing:
3. Grated coconut ... 1/4 cup
4. Red chillies ... 8
5. Garlic ... 5 pearls
6. Dhaniya (coriander seeds) ... 2 tsp
7, Fried bengal gram ... 1 1/2 tablespoon
8. Onion (big) chopped ... 1 no.
9. Tomatoes ... 2 nos
10. Salt ... to taste
Method:
- Grind the ingredients for stuffing (items 3 - 10) into a thick paste, wash the mixie with a little water and keep that water safe.
- Heat oil in a kadai, add mustard, urad dhal and bengal gram and add the ground paste.
- Split the brinjal into four and stuff the paste mixture into that.
- Heat oil in a kadai keep the brinjals into that add the water used for washing the mixie (about 1/2 cup) and keep it closed in medium flame and allow it tobe cooked.
- To prevent the scales forming in the kadai, now and then open the lid and stir the brinjals and close with a lid leaving a little gap.
- After the brinjals are well cooked and the water evaporates, stir it well and keep in low flame for one minute.
- After it has cooled down, again fill the brinjals with the spilled masala and serve with food.
