Stuffed Brinjal Curry

Ingredients
1. Brinjal (tender) ... 1/2 kg
2. Onion (big) ... 2 (chopped fine)

For stuffing:
3. Grated coconut ... 1/4 cup
4. Red chillies ... 8
5. Garlic ... 5 pearls
6. Dhaniya (coriander seeds) ... 2 tsp
7, Fried bengal gram ... 1 1/2 tablespoon
8. Onion (big) chopped ... 1 no.
9. Tomatoes ... 2 nos
10. Salt ... to taste

 

Method:

  1. Grind the ingredients for stuffing (items 3 - 10) into a thick paste, wash the mixie with a little water and keep that water safe.
  2. Heat oil in a kadai, add mustard, urad dhal and bengal gram and add the ground paste.
  3. Split the brinjal into four and stuff the paste mixture into that.
  4. Heat oil in a kadai keep the brinjals into that add the water used for washing the mixie (about 1/2 cup) and keep it closed in medium flame and allow it tobe cooked.
  5. To prevent the scales forming in the kadai, now and then open the lid and stir the brinjals and close with a lid leaving a little gap.
  6. After the brinjals are well cooked and the water evaporates, stir it well and keep in low flame for one minute.
  7. After it has cooled down, again fill the brinjals with the spilled masala and serve with food.
