Lemon Pepper Rice
Ingredients
Basmathi Rice ------------------ 2 cups
Water ----------------------------- 4 cups
Lemon pepper powder---------- 3 tblsp
Red chilies ---------------------- 3
Green chilies-------------------- 2
Oil--------------------------------- 2 tblsp
Ginger---------------------------- 1 small piece, chopped
Mustard Seeds ------------------ 1 tsp
Urad Dhall --------------------- 2 tsp
Hing Powder------------------- pinch
Curry leaves ------------------- a few
Cashew nuts ------------------- a few
Salt ----------------------------- to Taste
Turmeric Powder ------------ little
Method:
- First cook basmathi rice in water in a rice cooker.
- Spread the rice in a tray and allow for it to cool.
- Heat oil in a frying pan. Add red chilies, green chilies, mustard seeds, urad dhall, ginger, hing powder, and turmeric powder.
- Fry together for about a minute in the hot oil.
- Then, add the lemon pepper powder and salt.
- Turn of the heat. Add the mixture to the cooked rice, and mix very well to coat all of the rice with the spice paste.
- Garnish with curry leaves and cashew nuts. Serve with Potato Fry or Chips.
