Lemon Pepper Rice

Ingredients
Basmathi Rice ------------------ 2 cups
Water ----------------------------- 4 cups
Lemon pepper powder---------- 3 tblsp
Red chilies ---------------------- 3
Green chilies-------------------- 2
Oil--------------------------------- 2 tblsp
Ginger---------------------------- 1 small piece, chopped
Mustard Seeds ------------------ 1 tsp
Urad Dhall --------------------- 2 tsp
Hing Powder------------------- pinch
Curry leaves ------------------- a few
Cashew nuts ------------------- a few
Salt ----------------------------- to Taste
Turmeric Powder ------------ little

 

Method:

  1. First cook basmathi rice in water in a rice cooker.
  2. Spread the rice in a tray and allow for it to cool.
  3. Heat oil in a frying pan. Add red chilies, green chilies, mustard seeds, urad dhall, ginger, hing powder, and turmeric powder.
  4. Fry together for about a minute in the hot oil.
  5. Then, add the lemon pepper powder and salt.
  6. Turn of the heat. Add the mixture to the cooked rice, and mix very well to coat all of the rice with the spice paste.
  7. Garnish with curry leaves and cashew nuts. Serve with Potato Fry or Chips.
