Ingredients
1. Big brinjals ... 1/2 kg
2. chopped Onions ... 2 nos (big)
3. Coriander leaves ... a little (2 stalks)
4. Chopped Tomatoes (ordinary) ... 1 cup
5. Red chillies ... 2
6. Green chillies ... 5 nos
7. Curry leaves ... 1 stalk
8. Mustard ... 1 tsp
9. Turmeric powder ... 1/2 tsp
10. Broken urad dhal ... 1/2 tsp
11. Salt ... to taste
Method:
- Cook the brinjals, grill them in flame and peel off its skin and mash it well.
- Heat oil in a kadai, add mustard and after it splatters add urad dhal and after it turns golden brown --
- Add the onion and the salt required for that and saute till golden brown.
- Add green chillies, the curry leaves without its stalk and saute
- Add the tomatoes, the balance required for the entire dish and a pinch of turmeric powder and the mashed brinjal and saute.
- When it attains the sambar consistency, (say in about 5 minutes) garnish with coriander leaves.
- Would make an excellent side dish for idli and dosa.
