Kosumalli

Ingredients
1. Big brinjals ... 1/2 kg
2. chopped Onions ... 2 nos (big)
3. Coriander leaves ... a little (2 stalks)
4. Chopped Tomatoes (ordinary) ... 1 cup
5. Red chillies ... 2
6. Green chillies ... 5 nos
7. Curry leaves ... 1 stalk
8. Mustard ... 1 tsp
9. Turmeric powder ... 1/2 tsp
10. Broken urad dhal ... 1/2 tsp
11. Salt ... to taste

 

Method:

  1. Cook the brinjals, grill them in flame and peel off its skin and mash it well.
  2. Heat oil in a kadai, add mustard and after it splatters add urad dhal and after it turns golden brown --
  3. Add the onion and the salt required for that and saute till golden brown.
  4. Add green chillies, the curry leaves without its stalk and saute
  5. Add the tomatoes, the balance required for the entire dish and a pinch of turmeric powder and the mashed brinjal and saute.
  6. When it attains the sambar consistency, (say in about 5 minutes) garnish with coriander leaves.
  7. Would make an excellent side dish for idli and dosa.
