Aappam Dosai

Ingredients
1. Raw rice ... 1 cup
2. Boiled rice ... 1 cup
3. Urad dhal ... 1/4 cup
4. Salt crystals (for good taste) ... 1 3/4 tsp
5. Coconut Milk from 1 big coconut ... 3/4 cup
6. Sugar ... 3 tsp
7. Cooking soda (Baking soda) ... 1/4 tsp
8. Oil or Ghee ... as required.
With this the batter out of the above can give about 22 to 24 aappams. (each giving 95 calories).

 

Method:

  1. Soak the dhal and rice together for 3 hours
  2. Grind it fine and keep aside for 24 hours.
  3. Next day grate the coconut and take the extract (milk) twice approximately to 1/4 cup.
  4. Filter the coconut milk, mix the sugar and cooking soda and add it to the batter. and mix it well after 1 or 2 minutes.
  5. Take a kadai which should be deep heat it and wipe it with a cloth soaked in oil, and keep it on the stove.
  6. Pour one ladle of the batter and make a circular movement of the kadai (by holding with a tongs or with a cloth) so that the batter spreads thinly to the edges and a bit thicker in the middle.
  7. Keep it closed and cook it only on one side and take it off from the kadai after the aappam is cooked well in the centre and the edges become crispy.
  8. For side dish, onion chutney or coconut chutney would be super.
